Hi, I’m elaine

Protecting our eyesight is fundamental to our well-being – a truth I cherished during my decades-long career as a professional pilot, where acute vision was paramount. While I once boasted 20/15 vision, I now rely on 'cheaters', yet retain my sharp farsightedness.

In the world of aviation, the adage 'Always think ahead of the aircraft' rings true, particularly when piloting high-speed jets. The stakes are high. Things happen fast and one needs to think ahead; way ahead. The consequences could involve running out of fuel, landing at the wrong airport, or worse, having an incident or accident – costing lives. This philosophy mirrors my approach to wellness. If you neglect your health today, you could lose energy and run out of steam; ending up at an unwelcome destination (a hospital or nursing home), or worse, unintentionally shorten your life. Short-sighted choices today can greatly compromise tomorrow’s vitality.

Beyond my passion for aviation and health, I find joy in exploring new cuisines and experimenting with plant-based recipes. When not teaching Food for Life classes, hosting PCRM events, or educating others on the wonders of plants, you might find me hiking Wisconsin’s farmland with my dog Greta Garbo. I also enjoy practicing yoga, rock-climbing and reading John Sanford and Lee Child novels.

Despite the cultural mantra of 'living in the moment,' the choices we make daily profoundly impact our future well-being. Dr. Michael Greger aptly emphasizes the importance of dietary habits: 'Eat a healthier diet now to avoid disease later.' Yet, the allure of the Standard American Diet (SAD) ensnares many, fostering illness rather than vigor. It’s designed to make us sick and keep us sick.

Having transitioned to a plant-based lifestyle over two decades ago, I've been spared the ailments plaguing countless others. While genetics may predispose us to disease, our dietary choices determine whether these genes are 'switched on.'
