What is a farsighted foodie?

(Adjective) Having or showing foresight or good judgment

(Noun): A person with a special interest in or knowledge of food

When applied to health and wellness, it means one who adopts, promotes, and takes the mystery out of a Whole Food / Plant-based (WFPB) way of eating.

This easily involves eating foods that are minimally processed. This includes whole grains, fruits, vegetables, legumes (beans, peas, and lentils), tubers (potatoes, yams, root veggies), nuts, and seeds. It limits or avoids animal products (meat, fowl, fish, eggs, and dairy), and refined foods like sugar, white flour, and processed oils.

What it’s not:

It’s not a diet.

It’s not a fad.

It’s not about restriction.

It’s not about skipping meals.

It’s not about calorie counting.

It’s not about carefully measuring or weighing portions.

It’s not about giving up flavor.

It’s not about going hungry or starving oneself.

It’s about: Joy, Abundance, Health, Wealth, and Well-being.

The class will guide participants toward healthier low-fat plant-based diets that reduce incidence of cardiovascular disease. For some, this may be the first time food choice is prioritized over restricting food amounts. Learn about delicious plant-based recipes that help to lower cholesterol, control diabetes, lower blood pressure, and even boost energy and mood. This cooking demonstration focuses on the Power-of the Plate—empowering participants to make easy and affordable healthy meals at home.

Universal Meals—Adult cooking class

More people than ever have a specific diet due to health reasons, environmental or humane concerns, allergies, or cultural or religious traditions, and the Universal Meals program was designed to meet these needs. With Universal Meals, everyone has a seat at the table. This class offers simple guidelines and recipes that focus on vegetables, fruits, legumes, non-gluten grains, herbs, and spices. Universal Meals recipes are free of animal products, gluten-containing grains, nuts, alcohol, and other allergens to accommodate food preferences and common allergies.
